Also known as Tree Ear, Cloud Ear and Black Fungus. Averaging between 40-45 pieces per pound, they are best stored in a plastic bag and kept cold, between 32-34 degrees F. Wash thoroughly before using. Very wet, and with a consistency and look of fresh liver, the woodear is best used in soups and stir-fry, where it absorbs flavors well, while maintaining a somewhat crunchy and sweet flavor. Mushrooms neither produce, nor are affected by ethylene gas. Store away from odoriferous foods.
